Biocatalysis is the use of natural catalysts such as protein enzymes to perform chemical transformations on organic compounds. Such process is of particular importance for sectors such as the food industry, since the production of wine, beer, cheese etc. is dependent on the effects of microorganisms. Biocatalysis is also used by the pharmaceutical industry to produce fine chemicals.
