Over the last decades, wine production has reached a standstill in terms of improvement of organoleptic properties and wine elaboration methods, and is instead promoting the standardisation of flavours and tastes and perpetuing a unique winemaking method. As consequence, the leadership of European wines is being questioned by emerging producers like USA or China. The European wine industry needs thus to differentiate -while maintaining wine quality- to stay afloat in this competitive market.
The purpose of this study was to analyse the technical, commercial and financial viability of Æternum, identifying the necessary development actions to take the final product to market readiness and confirming our project’s potentiality to bring innovation into one of the most traditional and ancient markets ever.
