Descripción del proyecto DEENESFRITPL Una nueva tecnología para eliminar el azúcar de los zumos Según un estudio reciente, los azúcares naturales presentes en la fruta y la verdura frescas son tan perjudiciales para la salud humana como los azúcares añadidos. La tecnología Better Juice propone un método de bajo coste para eliminar los azúcares naturales sin afectar al sabor y las propiedades organolépticas de los productos. La tecnología puede aplicarse a las líneas de producción existentes en el sector de los alimentos y las bebidas con un coste estimado de producción de 0,1 euros por litro de zumo de frutas o verduras. El proyecto Better Juice, financiado con fondos europeos, tiene como objetivo diseñar su prototipo industrial después de una investigación de mercado detallada para planear su procedimiento de certificación, modelo de negocio y estrategia de comercialización. In fact, despiteinitial enthusiasm for natural fruit juices, recent studies have demonstrated the natural sugars are as much harmful as addedsugars do. Thus, producers are focusing on the development of affordable and efficient technologies to deliver de-sugarizedproducts. However, to date no optimal industrial solution in this domain has been implemented. The BetterJuice technologyoffers something that has not been reached yet by other companies. We reduce and even eliminate natural sugars from fruitand vegetable matrix, without affecting the organoleptic skills of the product and even improving its taste. Calories reductionis achieved to at least 50%. Moreover, we are able to offer a really healthy choice for consumers because beveragesproduced with our technology are naturally enriched with bio-available and thus easily absorbable Calcium. The technologydoes not require the modification of the existing production lines and its impact on the production costs has been assessedat € 0,1 per 1 litre fruit/vegetable matrix. This low cost factor, along with the ascertained readiness of consumers to switch tohealthier hydration even if on higher price, offers the opportunity to producers to create novel product lines with appealingclaims and thus setting the price point that can significantly maximize their profit margins. The BetterJuice technology usesdisruptive bio-conversion approach delivered through enzymatic activity of food grade microorganisms. The technology is ofinterest of some of world leading juice producers. Current project will enable us to collect users' requirements and thus toproperly engineer the industrial prototype of the device. Furthermore, a detailed market study will be done, so to verify andvalidate the intended business model and commercialization strategy, as well as related certification path.
