TEST METHODS DEVELOPMENT FOR THE PRACTICAL ASSESSMENT OF FOOD PROCESSING EQUIPMENT CLEANABILITY

Objective

The research covers the field of (microbiological and chemical) fouling and cleaning of food processing equipment by a multidisciplinary approach.
Modern analysis techniques for microbiological contamination as well as for the detection of chemical substances in production lines are used in conjunction with efficiency of cleaning procedures.

From the data obtained the project aims at modelling cleaning procedures, so that extrapolation of the information allows the design of practical procedures for hygienic and economic cleaning.
