Development of multi-sensor techniques for monitoring the quality of fish


A compression-relaxation test was developed for ice-stored cod. It was shown that there were combinations of parameters extracted from compression-relaxation curves that correlated with sensory perception of texture (finger test from QIM) in ice-stored cod. Therefore, this test can be used alone or as part of a multi-sensor device when variations in texture are expected, thus to me linked with the AQI (Artificial Quality Index) method.
