MULTIFREQUENCY IMPEDANCE MEASUREMENTS TECHNOLOGY FOR MEAT QUALITY CONTROL

Objetivo

Multifrequency Impedance Measurement (MIM) technology was tested by NTE (ES), an aerospace engineering company, and IRTA (ES), a meat research institute, during the last few years to assess meat quality in different types of meat with satisfactory results. The technology was evaluated for PSE pork determination and General meat quality determination. The results of every application were two reliable MIM systems. The logical continuation of this work was the supply of the technology to the meat processing industry, as well as the technology assimilation.

This project represented the required continuation of the activities. In order to perform a validation of the technology for industrial application, several companies were invited to carry out activities together with IRTA and NTE in the project MIM-Q of the INNOVATION program: two meat processing companies ESPUÑA (a Spanish SME), IMPERIAL (BE) and a meat processing hardware manufacturer KARL SCHNELL (a German SME). The main objective of the project was the validation of the technology to serve as a reliable tool for meat quality determination.

In order to obtain such a reliable tool, the two developed systems were tested for the above mentioned applications under industrial conditions. Three of the partners tested the systems at their facilities and during their standard industrial processes. These three partners then played the role of the end users for the two applications. ESPUÑA evaluated the General Meat quality application. Its interest in this part is to use a reliable tool to improve its ham curing production process. IMPERIAL evaluated the PSE pork determination, which is based on improving its production of high quality cooked ham. KARL SCHNELL evaluated one aspect of the General Meat Quality, which is the Fat Content determination. The information gathered during the validation was expected to be used to spread the application of the technology to other different processes, as well as to obtain a tool to determine quality of meat raw materials received by the meat processing industry. The final result of the project have been two systems applying the MIM technology that could be used to reliably predict meat quality in the meat processing industry.
