Food analysis using isotopic techniques

Obiettivo



Multi-isotope analysis, the determination of isotope ratios by Nuclear Magnetic Resonance Spectroscopy or Mass Spectroscopy, is becoming increasingly used in the food industry and by national food control laboratories as a method of authenticating both raw materials and finished products. These highly sophisticated techniques are capable of determining the botanical and geographical origin of a wide variety of foodstuffs, thus providing a means of detecting product adulteration and controlling mislabelling practices which is virtually impossible to circumvent.
The European Union has officially adopted the used of isotope analysis as a means of controlling sugar addition in wines. Its successful implementation is the wine-producing Member States has considerably reduced the financial losseswhich the Community had incurred due to over-chaptalisation. However further work is required to improve the use of the method in particular as regards the permanent comparability of results between laboratories (reproducibility) and the interpretation of isotopic data. There are a number of other applications of these methods, including detection of undeclared sugar addition in fruit-based products (juices, concentrates, purees) and origin determination of certain flavours (vanilla, benzaldehyde, anethole), spirits (whisky, rum, cognac) and vinegar and vinegar-based marinades or sauces. The FIT Network is a strategic alliance of European scientists working in areas related to isotopic techniques, from both public and private laboratories and research institutes, from industry, and from academia. Direct contact will be maintained with the CEN workinggroup on isotopic techniques (TC174). Such a body of experience and expertise will provide the necessary impetus to develop and sustain Europe's eminent position in the use of isotope technology for food control applications.The work involved is divided into four major units:
-Research and development: consolidation research efforts and carry out feasibility studies to extend the techniques into new areas. -State of the art review: an update of the state of the techniques leading to recommendations and standards for the European Commission. -Training and transfer of technology: mobility between members through organised hands-on training courses and technology transfer to other Member States through Network workshops in Finland, Greece and Ireland. -International Measurement Evaluation Programme and ProficiencyTesting Scheme: to ensure the correct use of isotopic techniques by checking member laboratories' performance on a regular basis, once the technique has been officially validated.
