Objetivo
The goal is to develop a novel protocol to produce rationally designed multi-wall microcapsules to protect and deliver bioactive nutraceuticals in staple foods. Applying hybrid-drying techniques, in order to prevent thermal and oxidative damage, will carry out the encapsulation of sensitive nutrients with proven physiological effects.
