The Sixth International Congress on Polyphenols Applications will take place from 7 to 8 June 2012 in Paris, France.

Polyphenols are a structural class of mainly natural, but also synthetic or semisynthetic, organic chemicals characterised by the presence of large multiples of phenol structural units. The number and characteristics of these phenol structures underlie the unique physical, chemical, and biological properties of the polyphenol class.

Polyphenols are abundant micronutrients in human diets, and evidence for their role in the prevention of degenerative diseases such as cancer and cardiovascular diseases is emerging. The health effects depend on the amount consumed and on their bioavailability. Ingestion of them occurs by consuming a wide array of plant foods; correspondingly, the role of dietary supplements as a method of realizing these health benefits is the subject of considerable discussion.

The conference will highlight the recent advances on polyphenols. It will bring together experts from academia and industries to debate on the latest scientific advances in the field and their uses. Session topics will include:
