Acorns revaluation for human consumption: genomic selection and development of new functional foods

Promoting the numerous health benefits of acorns

The cone-shaped acorn nut is a rich food source for wildlife. However, its rich fibre and antioxidants content also provide humans with a broad range of benefits. These include protecting the heart, boosting energy, improving digestion, regulating blood sugar levels and building strong bones. The EU-funded ACOFOOD project aims to make these many advantages better known, particularly given the abundance of oak trees in the Mediterranean region. It will choose the genotypes with the most optimal functional characteristics for consumers, and identify the markers associated with healthy phenolic compounds and absence of astringency and cytotoxicity.

Objective

The objective of ACOFOOD is to promote the consumption of acorn by human beings as it is a nutritious fruit with high production in the Mediterranean region, selecting the genotypes with the best functional characteristics for the consumer, identifying markers related to healthy phenolic compounds and , the absence of astringency and cytotoxicity, and developing a healthy acorn-based food. Dr. María Vázquez is a researcher with a scientific background in the field of postharvest of fruits and biomedicine, with great motivation to be able to combine these two disciplines, contributing to the implementation of a healthy and sustainable diet.
