Objective
The environmental cost of food production is very large, contributing to greenhouse gas emissions, overfertilization, habitat loss, and freshwater depletion. To remain within planetary boundaries, a shift towards more plant-based diets is necessary. However, despite policy efforts, the ecological impact of household food purchases has not decreased in the past decade. Current research lacks a clear understanding why this is the case and how to best encourage more sustainable consumer behavior, calling for a new approach.
This proposal uniquely combines marketing, economics, and psychology to study the effects of sustainable food policies through five interconnected work packages. Using large scale food purchase data from EU household panels, and developing an ecological accounting system, WP1 describes the full environmental costs of household food baskets. Supplementing the purchase data with surveys and administrative data, the proposed research will next study the impact of public and private food policies on demand, supply, and the environment. These policies aim to change household purchases and food consumption through four mechanisms: enhancing environmental numeracy (WP2), improving attitudes to plant-based foods (WP3), increasing the availability of sustainable alternatives (WP4), and adjusting prices (WP5). Leveraging that WP2-5 use the same household panels, WP5 also compares the effectiveness of the different policies.
The proposed research breaks additional new ground by developing a demand system that includes the effect of time cost or transaction cost on what consumers buy and that explains how time costs and convenience impact food choices differently than prices (WP4).
The substantive findings of the proposed project will offer valuable insights in how to change diets towards foods with lower environmental impact. The project's outcomes are expected to contribute significantly to the success of the EU Farm-to-Fork Strategy to combat climate change.
