Cultivated Meat by Rapid Manufacturing of Muscle-Fat-Protein Building Blocks

Biofabrication platform for rapid cultivated meat production

To counter the significant contribution of mass food production to climate change, more sustainable protein sources are required. Cellular agriculture is an approach to generating meat or animal-derived products through cell culture or microorganisms, thus avoiding the need for conventional animal husbandry practices. Supported by the Marie Skłodowska-Curie Actions programme, the RAPID-MEAT project aims for the development of a high-throughput biofabrication platform. These novel tools can create 3D muscle-fat composite tissue to improve scale and quality of cultivated meat. This project will make use of a microfluidic technology with a high yield for producing protein-rich, edible microgels, as well as making high-cell-density muscle and fat spheroids. Moreover, AI-guided bioprinting will facilitate tissue organisation with customisable protein and lipid content.

Objective

This project develops a high-throughput biofabrication platform to create physiologically relevant 3D muscle–fat composite tissues advancing cultivated meat production for sustainable cellular agriculture. The approach integrates: 1) a high-yield microfluidic system for producing natural, protein-rich and edible microgels; 2) rapid generation of high-cell density muscle and adipose spheroids; and 3) AI-guided, modular aspiration-assisted bioprinting for scalable spatial tissue organization with tunable protein–lipid composition. By addressing key challenges in tissue scalability, structural fidelity, and functional maturation, this bio-manufacturing platform will advance both cellular agriculture and tissue engineering, paving the way for sustainable protein sources and next-generation regenerative technologies.
