Objective
The project's main objectives will be to:
- Contribute to the knowledge of the ripening process and senescence of fruits and vegetables.
- Study the role of substances produced or changed during ripening on the quality of fruits after storage.
- Solve problems related to pathological diseases and physiological disorders during post-harvest preservation.
- Study the operations and equipment for the processes of treatment, handling and commercialization of fruits and vegetables.
- Study the quality criteria that could permit the establishment of quality control methods.
The post-harvest treatment of fruits and vegetables is a subject that has always been of practical interest. Scientific studies have been carried out in this field for many years. However, practical applications have largely been a case of trial and error.
At present, there is an important body of knowledge but there are still many doubts on the mechanisms that stimulate ethylene production, ripening and enzymatic reactions. Also there is a lack of understanding of how the empirical methods of preservation work and which products influence better quality. There is also a need for a better control of pathogens, pathological disorder and the improvement of handling and transport systems especially for certain delicate products.
