Classification of Olive Oils and Detection of Adulteration

Ziel

This project aims to investigate the effect of olive cultivar, olive growing location, harvest year and the processing on the characteristics of olive oils and to develop methods to detect the adulteration of oils. Fatty acid composition, infrared spectra, total phenol content, phenol profile, per cent free fatty acids, oxidative stability and colour of the oils that will be obtained from six varieties of olives grown in the same grove in Izmir region will be determined. To determine the effect of location, characteristics of oils from Izmir region will be compared with oils from Edremit region. Differences/similarities between the composition of commercial and self-extracted oils will provide information about the effect of processing. Using multivariate statistical analysis techniques, oils will be classified according to factors stated above.

Data obtained for the classification of oils will also form a database for the adulteration detection studies. Using the determined characteristics of oils, rapid methods will be developed for the detection of adulteration of mono-varietal oils with other olive oil types and other edible oils. This study is concerned with a product quite important for European agriculture and, as the number one consumer and exporter of t his product, the project will be valuable both from economic and product quality of points for EU.

Researcher of this proposal involved in similar projects during her post-doctoral appointment in Purdue University of USA and would like to apply her experience and knowledge she acquired during these studies into proposed project. She would like to continue her studies with classification and detection of adulteration for wine. Izmir Institute of Technology could provide researcher all the necessary means for the successful completion of the project and environment conducive to her reintegration into European scientific community.
