MOLECULAR AND ISOTOPIC CHARACTERISATION OF VIRGIN OLIVE OIL

Obiettivo



The proposal aims to develop a prenormative, complete and integrated set of methods to characterize olive oil in terms of molecular composition. The results of the proposal should allow accurate detection of adulterated olive oil and furthermore enable the source identification of olive oil. In other words, it would allow establishment of an origin control. The proposed study would also allow determination of the type of processing used in producing the olive oil.
