A closed cycle spray drying and encapsulation process for heat-sensitive products

Objective



Spray drying is used in the processing of a large variety of substances, including flavours and foodstuffs, chemicals and pharmaceuticals, in order to remove moisture and ease handling of the product. There are three main limitations to this technique which arise from the use of hot air as a drying agent; The heat drives off volatiies which are usually vented to the atmosphere along with the extracted water vapour. This creates an environmental problem in the locality, with many products producing particularly strong odours which are often objectionable. Many substances are sensitive to heat, and the product quality can degrade during the drying process. Protein based products (including pharmaceuticals and enzyme catalysts) are particularly sensitive, and their use in many applications has been restricted for this reason. The dried substances often degrade during storage, absorbing atmospheric moisture even 24 hours after processing. Strict air conditioning/environmental controls are therefore required for storage areas. The spray drying process is the dominant drying technique in current use, and no suitable, practical alternative is available. Industry therefore requires the adaptation of the process in order to alleviate the above problems. This project will research and develop the appropriate process technologies with the aim of developing a new-generation spray drying technique, which will address the problems listed above. Its main features will be as follows; A closed cycle spray drying process which recycles the hot drying air and does not emit volatiles to the atmosphere. A two stage drying process, which will be optimised to reduce heat degradation of product An incorporated, in-line continuous encapsulation stage to protect the dried product from contamination by atmospheric moisture or oxidation A number of separate processes will be developed, optimised for the spray drying and encapsulation of various classes of commercially important substances.
