Obiettivo
The appearance of acaridae from the tyrogliphidae family in the curing process is one of the most worrying problems for the cured ham industry, so it concerns more than 12% of the production. The presence of this parasit on the surface of the ham can be noticed at first sight, it prevents the commercialization of the affected pieces and obstructs the sales of this product aboard the producer countries.
Although it is a key problem for the producers, there is not an industrial method to prevent it, being effective and economic at the same time. Several methods have been tested but either they have not reached the desirable results or they have been limited to laboratory tests without industrial implementation. Also it is limited by sanitary normatives the use of certain chemical products that have been proved as effective in fighting these acaridae.
The aim of this project is developing an industrial method to stop the expansions of the acaridae in the curing shops. To reach this aim it is necessary an investigation consisting in the following activities: - In situ studying the ecology of the parasits.
- Establishing of its relation with the technologic process of curing. - Design and test of constructive and operating solutions, and new equipment.
