Artificial sensing techniques for the evaluation of quality

Obiettivo

This project aims to develop, extend and valorise instrumental methods of determining the consumer-perceived macroscopic quality factors of agro-food products.

In this context, quality factors consist of several properties that may be distinguished by consumers' senses, such as visual appearance, internal and external flaws, odours and tastes. The techniques that are most adapted to these goals are :
1. vision techniques in the Ultraviolet, Visible and Infrared domains ;
2. imaging techniques such as NMR, Ultrasonic, or Microwave Tomography;
3. instrumental sensor techniques such as the various Artificial Noses.

In all these cases, the instrumental responses are multidimensional and require the use of Chemometrics to extract the information and correlate it to the consumers' perceptions. To meet these aims the following actions will be undertaken :
1. Draw up a review of macroscopic food quality issues (visual appearance, internal flaws, odours and flavours) and the multidimensional instrumental techniques best adapted to control each of these food quality properties.
2. Improve those existing equipment and methods using multidimensional data and images that have been identified as showing potential for addressing these quality issues.
3. Develop new hybrid techniques combining different types of information so as to optimise the sensitivity and predictive power of these multidimensional sensors and images.
4. Provide a framework for discussion and exchange between scientists interested in food quality assessment using these very different multidimensional instrumental techniques.

This project is submitted in the Area "Concertation Activities" (Area 6), in order to bring together, at a European level, scientists already working in these fields at the national level. The aspect of this Area which is covered is quality (including organoleptic quality) of food production and processing.

This project also covers elements in "Generic Science and Advanced Technologies for Nutritious Food" (Area 3) "Advanced and Optimised Technologies and Processes" (Sub-Area 3.3) and "Agriculture, Forestry and Rural Development" (Area 4) - "Quality Policy" (Sub-Area 4.2). The objectives of ASTEQ will be attained through:
- A centralised data base, including information on the state of the art of the different instrumental techniques, the research expertise to be found within Europe, the currently-available equipment and their potential applications for food products
- A widely accessible databank of multidimensional signals and images generated using the different instrumental techniques
- The broad diffusion of a regular Newsletter - Organisation of short-term exchanges and visits of participants
- Organisation of two European workshops on the subject
- Organisation and co-ordination of meetings and exchanges on specific

sub-topics - Encouragement of links to favour new collaborative studies.
