ETHYL CARBAMATE IN WINE RMs

Ethyl carbamate (EtC) is a carcinogenic substance, present in all fermentation media containing ethanol. The United States and Canada have established a limit of 30 ug/l in wine, which is also recommended by The European Communities and the Organisation Internationale du Vin et de la Vigne (OIV). This limit may be lowered in the near future and will required improvement of methodology, a problem of concern for the OIV and the Communities.
Ethyl carbamate is usually determined by Gas Chromatography (GC). There are differences between the various methods used which arise from the varying sample preparation procedures and detection systems (FID, NP, MS, etc.).
The objective of the project is to improve the accuracy and the level of agreement between European laboratories and to prepare reference materials.

STATUS

The first intercomparison in which 25 laboratories determined EtC in four samples of white and red wines will be completed in 1992.
