Can a tomato a day keep the doctor away? Scientists meeting in Paris on 25 October may have the answer. After spending three years studying antioxidants in tomatoes and their derivatives and their benefits for health, a team of 25 researchers working on the EU-concerted action FAIR CT97-3233, will present their results. The programme will run as follows: - Opening by Michel Laneret, General Manager of ONIFHLOR - 'The antioxidants in tomatoes: synthesis, control and analysis', by Dr. Pascal Grolier (INRA, France) - 'The processing and storage effects on the content and bioavailability of the antioxidants present in tomato products', by Dr. Carlo Leoni (SSICA, Italy - 'The relationship between tomatoes, their constituents, and diseases', by Dr. Mariette Gerber (INSERM, France) - 'The Role of tomatoes and their products in healthy diets?', by Prof. Rod Bilton (Liverpool John Moores University, UK) - 'Tomato in Provençal cuisine', by the Chef Christian Etienne - Discussion - Concluding remarks by Dr. Liam Breslin, European Commission, DG Research
