Cel Rapid technological developments in new methods of food production within the Hotel and Catering Industry demand that the professional chef has greater knowledge and more advanced skills in the sphere of food science and catering technology than previously. This pilot project addresses the need for an applied food science training module for apprentice chefs which is designed and delivered in a way that is easily assimilated. Learning needs will be identified and used to design an integrated food science which can be delivered effectively through different training arrangements.The partners will audit the impact of new technologies on the employment patterns of the professional chef and identify the associated scientific principles and learning requirements for working effectively in a technologically advanced environment. From this a training module will be designed which integrates these principles with the food processing and production tasks of the chef. Accompanying resource material will also be developed to facilitate the teaching and delivery of this training module.
