FOOD AUTHENTICITY : ISSUES AND METHODOLOGIES

Objective



The proposal aims to bring together scientists from the food industry, research institutes and universities to coordinate research related to food authenticity. An inventory of authenticity problems identified by responsible interests will be produced. Those analytical techniques (either singly or in combination) which show greater promise for addressing those issues will be identified and investigated as a basis for new and rapid authenticity testing procedures.
