Human interactions with the mountain birch forest ecosystem: implications for sustainable development

In the worldwide attempt to reduce dietary saturated fat intake, carbohydrates may provide a suitable alternative. The aims of this project are to characterise the "metabolic quality" of various carbohydrates, with the main focus on starch and lactose. With 13C stable isotope techniques, 13C-glucose response to various carbohydrate sources will be studied, including parameters that could modulate this response such as gastric emptying/ intestinal transit and digestion rates. A variety of products (including breakfast food and baby food will be developed and evaluated. Use of animal models will produce additional parameters to define starch-containing products, suitable for diabetics or for people at risk to diabetes and obesity. These products will be then tested in relevant target populations. Fermentation of carbohydrates (13C starch and 13C lactose) in man will be characterised to develop low fat dairy products for lactose intolerant persons.
