An international symposium on predictive microbiology applied to chilled food preservation will be held in Quimper, France, from 16 to 18 June 1997. The event is organized by the International Institute of Refrigeration and COST Action 914 - Predictive models of microbial growth in foods.

Predictive microbiology establishes models to predict how long safety and quality can be guaranteed, by forecasting the activity of micro-organisms in food. In particular, it is of particular value in the rapidly growing area of chilled food preservation.

The aim of the symposium is to bring together experts from the fields of chilled preservation and predictive microbiology, in order to increase knowledge and awareness in areas where the two fields overlap.
