Foreseen Results
The outcome of this project will provide sufficient data for characterisation of nutritional value nad organoleptic characteristics of tested fish and would therefore give information for establishing reliable quality standards.
Quality and quality standards in an area of primary importance for the European Community since there is a general effort of standardising the quality of every product that is being used within the European countries and / or traded among them. For this reason quality is a new important aspect in the international trade.
The main objectives of the proposed work are :
- Compare the biochemical composition of wild and cultured species and identify differences in compounds which may affect their nutritional value and / or organoleptic characteristics.
- Study seasonal changes in composition in relation to dietary history and area of collection of fish.
- Couple chemical analyses and instrumental texture measurements to organoleptic characterisation of the fish by taste panels, and finally study the spoilage patterns of fish under test identifying duration of storage for an acceptable product.
The fish which will be tested include two marine species, the sea bass and sea bream, which are the main products of Mediterranean aquaculuture and three freshwater species common carp, which is a product of many European countries, as well as silver carp and African catfish. Fish of commercial size will be used throughout the project will be collected from selected farms.
