Cutting of food products by ultrasounds

Food products are more and more proposed to the consumers already cut. Many technologies are used like cutting with skip-tooth saw blade, laser cutting or high pressure water cutting. But, all of these technologies present many inconveniences and more particularly when products are soft, sticky, crumbly, heterogeneous, such as: high level of raw material losses (sometimes near of 6%), bacteriological contamination of one product by another one, food products are sometimes burnt (laser cutting), they don't propose safety guarantee for working personnel. Cutting products by ultrasound is a new technology which can solve all of these problems. It is able to cut very small portion of soft products with no contamination and no danger for workers. Commercial opportunities are very large and the proposers have already identified many companies (bakery, pastry industry, pastry cooked delicatessen,...) which are interested in developing such technology. Some trials have been made in laboratory and are very optimistic.
